The ConTanima restaurant, located in the heart of Bolzano, offers a unique experience for all senses. It draws inspiration from Bolzano’s history as a melting pot of cultures, worlds and culinary delights. Since 1400, merchants from Trento, the Republic of Veneto and Florence have settled in Bolzano. Then, the region belonged to the Austro-Hungarian monarchy until 1919. This has shaped our region’s cuisine, architecture and culture. The ConTanima philosophy emerges from the interplay of these influences. The concept is based on rediscovering our roots, down-to-earthiness, exchange between cultures and enhancing the region.
ConTanima's gastronomy is based on fresh, seasonal products sourced from attentive local producers and small businesses in South Tyrol, Tuscany, Veneto and Austria. The cooking techniques and the preservation methods combine tradition and innovation by respecting our environment. It is a "living" cuisine, as we find many fermented and germinated products in it. The key element is the enhancement of a few components on the plate, reinterpreted through an interplay of flavours, consistencies and temperatures.
