The ConTanima restaurant, located in the heart of Bozen, offers a unique experience for all senses. It draws inspiration from Bozen’s history as a melting pot of cultures, worlds and culinary delights. Since 1400, merchants from Trento, the Republic of Veneto and Florence have settled in Bozen. Then, the region belonged to the Austro-Hungarian monarchy until 1919. This has shaped our region’s cuisine, architecture and culture. The ConTanima philosophy emerges from the interplay of these influences. The concept is based on rediscovering our roots, down-to-earthiness, exchange between cultures and enhancing the region.

Dario Tornatore is a virtuous chef, in love with his work, into which he puts passion and commitment. His career was formed through international cuisines, from Italy to France, passing through London to arrive in Bahrain and Saudi Arabia. The menu is a collection of culinary stories from around the world. This deep connection with the cultural and historical roots of the dishes offers guests an experience that goes beyond taste. In our commitment to sustainability (GSTC certification obtained in June 2023), we use exclusively sustainable ingredients from local suppliers, guaranteeing responsible cuisine and of high quality. The Chef uses innovative techniques such as grilling, smoking, fermentation and drying, creating a unique menu inspired by every moment of his life: ready to taste!
