BIOGRAPHY OF MANUEL ASTUTO
Artistic inclinations in a culinary setting

Born in Bolzano of South Tyrolean and Sicilian parents Manuel is one of the youngest Head Chefs in the whole of Alto Adige. At the age of just 26, back in 2010, he was appointed to run the Ristorante Laurin. His curriculum includes time at Bolzano’s historically famous Ristorante Kaiserkron and catering service for Ferrari’s Formula 1 team in Vienna, and also he has been responsible for gastronomic events at the European Parliament in Brussels and for Alto Adige Marketing (SMG).

His re-elaboration and distinctive way of combining regional ingredients with those of a more exotic origin has earned him a reputation as a creative and passionate artist of culinary ways. In his constant striving to create new and inventive dishes he favours the use of fair trade produce and other which can be sourced locally.
